Our preserved products taste homemade. Once collected by the main hunters of the area,\u00a0the truffles are selected manually, then\u00a0categorized by aroma, size and quality.\u00a0The top-notch ones are used for the fresh\u00a0market, while the smaller or less uniform ones\u00a0are destined for processing. To make a good\u00a0truffle selection we need to focus not only on its visual aspect but also on its smell and touch;\u00a0the truffle must be hard to the touch, cause if unstable can hide a rotten side.<\/p>

The fresh truffle is brushed to eliminate the most significant layer of earth but it is not perfectly cleaned because the soil residues create a protective layer for the truffle, allowing it to preserve its aroma. The truffle must be washed thoroughly, with a brush under running water, only at the time of its actual use because we completely expose the truffle to the air,\u00a0compromising, in part, its conservation time and\u00a0retention of the aroma.<\/p>

After being carefully washed, the truffle is frozen whole or sliced into round, thin flakes or ground as a base for the preparation of sauces. Once cooked, the products are automatically dosed and vacuum encapsulated in the glass jars. Finally, the jars are sterilized at 121\u00b0C to obtain long conservation, avoiding any type of added preservatives.<\/p>

The labeling, that is the regulation of the information reported on our products, is subject to systematic and careful review and updating. Our labels are designed to adequately inform consumers in several languages about the product’s characteristics, allowing them to choose the one that best meets their needs: in addition to the denomination, expiration date, place of production, list of ingredients, and nutritional values, we highlight all the allergens used in the product and the factory processes. <\/p>
