All of our sauces are based on our continued research of the old traditions.
They are, in fact, produced using recipes passed on from generation to generation, and as tradition would have it, they are simmered for hours.
Once opened, they need to be stored in the refrigerator, covered with extra virgin olive oil and consumed within two weeks.

Sugo alle Verdure

To the initial “soffritto” ( olive oil, onions, carrots and celery), is added egg-plant (aubergine), zucchine (courgettes) and peppers followed by tomatoes. It is excellent as a sauce for all pasta dishes.

Sugo di Pomodoro

To the initial “soffritto” ( olive oil, onions, carrots and celery), tomatoes are added and cooked (simmered) together. It is excellent as a sauce for all pasta dishes and for the preparation of meat dishes.

Wild Boar Ragout

To the initial “soffritto” ( olive oil, onions, carrots and celery), is added wild boar meat and pork meat followed by tomato, salt, spices, red wine and cooked together. It is excellent as a sauce for all pasta dishes, particularly for egg pasta such as pappardelle or tagliatelle.

Hare Sauce

To the initial “soffritto” ( olive oil, onions, carrots and celery), is added hare meat and pork meat followed by tomato, salt, spices, red wine and cooked together. It is excellent as a sauce for all pasta dishes, particularly for egg pasta such as pappardelle or tagliatelle.

Deer Sauce

To the initial “soffritto” ( olive oil, onions, carrots and celery), is added some “guanciale” and some “pancetta” followed by tomato, salt, spices, white wine and cooked together. It is excellent as a sauce for all pasta dishes, particularly for dry pasta such as bucatini.

Ragù alla Bolognese
