"Fossa" Cheese

Produced with sheep's milk and curd and seasoned in tufa pits for 100 days. It's excellent paired with chestnut or Strawberry tree honey, mustard, jam of figs, onions or Green Tomato, figs, "figs Salame" or jellies. If seasoned, is also excellent cheese. Should be stored in a cool place, wrapped in a damp cloth.
